An ornate Haveli style facade welcomes you to the Gordhan Thal Restaurant in Ahmedabad. An arch with a motif of elephants, flanked by wooden columns topped by capitals depicting the auspicious Kalash greet guests passing through the doors to enter the cool, air-conditioned environs of the restaurant.

As soon as you enter the restaurant, you come across a rectangular waiting area that is ornately decorated with mirrors and glasswork. A chandelier hangs from the ceiling, and a beautiful statue of Krishna playing the flute stands by the door that leads to the dining hall.

You push through the glass door to enter the dining area, which is abuzz with activity. Waiters dressed in brown briskly weave their way between the tables, their hands laden with traditional serving vessels. The hall itself is richly decorated with a predominance of gold-coloured floral designs. A bow and arrow hang from a pillar. The hall itself is a visual delight, but the guests are focused on the huge thalis in front of them.

We are ushered to our table with a traditional namaste and as soon as we settle down, a huge brass thali with 6 empty Katoris (small bowls) and accompanying cutlery is placed in front of us. That is the signal for a bevvy of waiters to surround us and fill our Thalis with varied and delicious fare. One serves a variety of curries, while another serves chutneys that are red and green. Another serves Dal and Kadhi. A heart-shaped vegetable cutlet and a kachori shaped like a small basket materialise from the dexterous hands of another waiter. A huge bowl of cool buttermilk is placed beside the Thali, as hot and fluffy Phulkas and pooris are served.

We take a pause to survey the colourful Thali which is filled to the brim, before digging in. It is a delectable melange of colours, flavours, and aromas. The tempting thali in front of us compels us to start our journey into the heart of the Gujarati Thali, which is actually a delectable blend of Gujarati and Rajasthani cuisines.

The curries are done just right, with salt and spice that are perfect and soothing to the palate. The pooris, Phulkas, and Bhakhris are soft and melt in the mouth, helped by generous coatings of pure ghee. The tangy and spicy chutneys add to the flavour of the Farsan which includes Dhokla and vegetable cutlets. The desserts include juicy Jalebis and Anjir halwa. The Shrikhand and Fruit Mattha taste heavenly, and the buttermilk helps to wash all this down.

The smiling waiters serve proactively and ensure that your thali is never empty, till you call it quits. You relax back with a smile of satisfaction.
